This recipe is a healthy quick dinner recipe perfect for feeding a family healthy meals on a budget. With just a handful of ingredients this quick weeknight dinner chicken recipe can be prepared in under 30 minutes.


Easy Grilled Chicken with Sautéed Mushrooms, Roasted Asparagus, and a loaded Baked Potato

Ingredient List

- 4 chicken breast

- 1/2 cup of chopped white mushrooms

- 1/2 lb. of fresh asparagus

- 4 russet potatoes

- salt/pepper

- paprika

- garlic powder

- olive oil

- sour cream/butter

Quick Prep Directions

  1. Season chicken breast with salt, pepper, paprika, garlic powder, and a drizzle of olive oil

  2. Wash white mushrooms, apply a rough chop, and set to the side

  3. Wash asparagus, chop off the lower 3 inches of the stem, and set onto a baking pan

  4. Season asparagus with salt, pepper, and an olive oil drizzle then cover with aluminum foil

  5. Wash russet potatoes and poke several times with fork or knife to allow proper cooking

  6. Preheat oven to 400 degree F

  7. Preheat stovetop sauté pan to medium-low heat



Cooking Instructions

  1. Place asparagus baking pan into 400 degree F oven on the lower rack and cook for 14 minutes turning asparagus spears half way through

  2. Sautee chopped mushrooms in a 1/2 tbs. of butter stirring occasionally until mushrooms have softened then remove mushrooms from the pan and set to the side in a covered bowl to retain heat

  3. Place seasoned chicken breasts into the sauté pan cooking for 4 minutes on each side or until juices run clear then remove from heat and cover with a lid to retain moisture

  4. Heat russet potatoes quickly in the microwave with the "baked potato" setting on your appliance

Cooking Tip:

For oven roasted baked potatoes allow for a 45 minute cook time by simply placing potatoes in the oven on a baking tray at 400 degrees F after applying salt and olive oil generously over the skin then covering with tin foil.


Potatoes can be flipped half way through to ensure even cooking.


Remove once potatoes have softened on the inside and serve with a variety of toppings including butter, sour cream, cheddar cheese, bacon bits, and minced green onion.
