Baked Cream of Mushroom Chicken with Broccoli and Buttered Rice
Prep: 10 minutes
Cook Time: 40 minutes
Serves: 4
Ingredients:
4 Raw chicken breast
1 Large head of broccoli
1 Can of Campbell's Cream of Mushroom Soup
1 Cup of uncooked white rice
1 tbs. of butter
salt
pepper
garlic powder
Cooking Directions:
Preheat oven to 375 degrees F
In a pot, bring two cups of water to a boil
Season water with salt, pepper, garlic powder, and 1 tbs. of butter
Pour rice into boiling water and stir
Boil rice for 10-15 minutes until most of the water has evaporated then place lid and continue to cook for 30 minutes over medium low heat
Wash and chop head of broccoli into individual florets
In a casserole dish place raw chicken in the middle and arrange broccoli florets along the outer edge
Pour Campbell's Cream of Mushroom Soup over the top of the chicken and broccoli florets
Cover with tin foil and place on the lower rack to cook for 25-30 minutes at 375 degrees F
Fluff rice with a fork and add additional seasoning to taste like extra butter, salt, or pepper before serving
